I love a good chicken salad and the easier it can be to make the better. I make it an open-faced sandwich because, well, gluten-free bread comes in really tiny slices and this way I get to have more chicken salad on it than I would if I made and actual sandwich. Serve with whatever you’d like on the side – chips, crackers, fruit, salad – the sky’s the limit!
