simple french toast casserole

February 13, 2013 by Lindsey 3 Comments

This casserole is so delicious and so easy to make. A few weekends ago I made a french toast casserole for a brunch potluck at a friends house. It was delicious, but it was filled, like maxed out with butter and sugar of all sorts: white, brown and powdered. I figured there had to be a healthier way to make it so I tried it out. It got five stars from Al so it must have been good!

I didn’t really measure anything, I think it’s the type of thing that you just make to your liking, but here’s the general process. The instructions are for a small casserole so adjust if you’re making a larger one.

Hey Lindsey, Medway 300 celebration is putting together a cookbook and we need recipes by March 1st. Do you and your mother, grandmother et al have anything to contribute? You have some great recipes and it would be nice to have something from you. You can email it directly to me or go on the Medway 300 website and go on the cookbook link. Remember to pass it along.
